Fruit and Dip
This is fabulous with strawberries,
blueberries, raspberries, blackberries, melon balls, etc. Take a cup of
fat free sour cream and mix in 3 tablespoons of honey. It’s
sweet and healthy!
Mini Quiche Cups
These are full of protein and vegetables,
and you can freeze a big bunch at one time. Just heat one or two in the
microwave whenever you want a quick snack.
-3 large eggs (or 3/4 cup egg substitute, or 3/4 cup egg whites)
-1 package frozen chopped spinach, thawed and drained
-3/4 cup reduced fat cheese
-1/4 cup diced veggies – bell peppers, mushrooms, etc.
-1/4 cup diced onions
-A few drops of pepper sauce
-Optional: a couple of shakes of your favorite mixed spice (Mrs. Dash,
Spike, Lemon Pepper, etc.)
Heat oven to 350F. Line muffin pan with foil cups and spray with
cooking spray. Mix all ingredients well in a bowl and fill the muffin
cups with the mixture. Bake for 20 minutes, or until a knife inserted
into a quiche comes out clean. This is one of my favorite healthy snack
recipes.
Baked
Fries
Yes, you can have Fries and still be healthy! These are incredible, and
kids love them. Just remember portion control! Potatoes are healthy in
small quantities.
-4 potatoes, cut into thin fries
-1 Tablespoon extra virgin olive oil
-1 teaspoon paprika
-1 teaspoon chili powder
-Pinch of salt
Mix the potatoes up with the olive oil until they are well coated. Add
the spices and mix until coated. Lie flat on a baking sheet or stone,
and cook at 375 degrees for about 20 minutes.

Smoothie
-One banana
-1 cup frozen strawberries
-1/4 cup unsweetened applesauce
-1 Tablespoon honey
-3/4 cup skim (nonfat) milk
-1/2 cup nonfat, unsweetened yogurt
Blend all ingredients in a blender. It makes a large smoothie that will
fit in a large plastic cup. (Hint: Having one of these each day may
help get things “on the move” again if
you’ve been “backed up.”)
